For those of you who don't know, Ghee is a form of clarified butter. It's simmered over a low heat until the watery whey floats to the top, clear butter fat is in the middle, and milk solids/protein are on the bottom. The ghee is the middle layer, prized in Ayurvedic medicine for both nutritional and medicinal reasons.
Because of the way it's processed, it can be cooked at high heat without burning, does not need to be refrigerated, is free from hydrogenated oils, and has no lactose. It stimulates digestion, is anticarcinogenic (helps get rid of the bad stuff), and can be used topically for burns (or as a moisturizer).
